I want to say a lot of things about Indonesian food and ruminate upon the politics of colonialism and the old the-shortest-road-to-cultural-integration-is-through-the-stomach hypothesis.
But, without time, I will refer you to the master, Rahung Nasution and his incredible cooking show Koki Kampungan — check out Bebek Garo Rica or Sotong Kari Hijau Mpok or sabal matah. Never has eating weird reptiles fished out of rainforest ponds looked so tasty.
